The Crab Houses of Maryland’s Eastern Shore
"The Chesapeake Bay, or simply the Bay, as it’s known to Marylanders, is the nation’s largest estuary, a vast, rich incubator for sea life born from the brackish combination of fresh and saltwater. The saltwater comes in steadily from the Atlantic while the freshwater runs down from a watershed that stretches as far north as central New York.
Maryland’s state-regulated season for crabs runs from the beginning of April until the last of November. Around springtime, watermen have emptied out their bushels of oysters and have already begun building their boxy wire traps, somewhat misleadingly called pots.
And just as hibernating mammals emerge from winter, so do last summer’s surviving crabs — their meat having been soaked in what might be the culinary world’s longest marinade. These are the crustaceans, plump with meat and measuring from six to six and a half inches across, that are announced on giant chalkboard menus at crab houses and seafood wholesalers all over Maryland as “jumbos.”
Smaller “mediums” and “larges” even out the catch all season, but it’s commonly stated in Maryland that the best time to fetch jumbos is late summer and early fall, when the crabs that have been lucky enough to survive the season begin to bulk up for hibernation. My mother swears that these crabs are the sweetest."

Table Talk: Salter returns to the Eastern Shore

"There's very big news on the Eastern Shore, with the arrival of celebrity chef Mark Salter at the Robert Morris Inn in Oxford. You might remember the British born Salter from his highly regarded 17-year stretch as executive chef at the Inn at Perry Cabin in St. Michaels. This move reunites him with Ian Fleming, Perry Cabin's former manager. Salter, who will be acting as the 300-year-old inn's proprietor as well, is ramping up for an official June 25 opening for the main dining room and the newly renamed Salter's Tavern.
Salter sent along some sample menus, and reading them made me very hungry. On the fine-dining menu, alongside his signature crab cake and Maryland crab spring roll with pink grapefruit, avocado and toasted almond, Salter is planning pretzel-encrusted soft shells, a Sri Lankan-rubbed grouper fillet, and wild rock fish with succotash, soft polenta and local beans."

"My husband and another couple visited this restaurant on June 28 and it was just as good as the first time we went in the summer of 2006. The gas pump out front throws you for a loop the first visit, but we were glad we didn't turn around and leave like we considered. The menu has some unique dishes. The baked oyster appetizer was to die for, and the guys raved over the seafood pasta. I had the pork tenderloin wrapped in the pastry which was good, but the pork was a little over cooked and I had to request a steak knife. The duck with blueberry sauce I had in 2006 was one of the best meals I ever had and definitely deserves another turn on the menu. The presentation with fresh flowers was just as it had been in 2006. The staff is of mixed ages and all were friendly and helpful, even the younger ladies. We thoroughly enjoyed it AGAIN and will definitely visit them the next time we are on the Eastern Shore."

We decided to "check it out" and wow, were we ever so glad that we went inside to experience a most wonderful crowd of "local" people having food and drinks .... and having lots of fun talking to the other folks in the area. This place is a MUST! We had the special that evening and there was more than enough for two people! By the time we left, the parking lot was overflowing with cars...and the inside was packed. We plan on going back very soon to enjoy another afternoon of great food and crowd!"
